While the name may sound a bit odd, the results of these spinach cupcakes were delicious and of course Oakville moms loved them even more since they had spinach baked right in!
If I need to bake a cake, my habit is to use a pre-set cake mix. Old habits die hard. Especially when they are easy and reliable and heck, even taste great!
I hosted a little Halloween party and the girls all decorated their cupcakes - with loads of sugary sweet candies (as pictured!). But at least there was a smidge of pumpkin in the cupcake to count as a vegetable!
