Saturday Morning Simple Fluffy Pancakes
This easy homemade fluffy pancake recipe has been used at my home for almost 10 years. This recipe is almost as fast to make as boxed pancakes and 10 times better.

We love lazy weekend mornings and a simple delicious meal. Quite often we'll finish our meal and head over to the family room for a nice chat and coffee while the kids play in the same room. I think it's awesome that families create little traditions that the kids can remember fondly later on in life with their own families.
Ingredients:
Wet stuff...
1/2 cup melted butter
2.5 cups milk (I use 1%)
2 eggs
2 tsp pure vanilla extract
Dry stuff...
2.5 cups flour
1/2 cup sugar
2 tsp baking soda
4 tsp baking powder
2 pinches salt
Directions:
I start by heating up my heavy, treated cast iron griddle (a non stack pan is fine)
In the first bowl, I mix all the dry stuff with a spatula.
In the second bowl, I crack the eggs, mix them a bit with the spatula and then add the rest of the wet ingredients.
Now I pour the wet mix into the dry mix and stir gently until all ingredients are incorporated. Be careful not to over mix.
By now, your skillet should be nice and hot. Pour a large spoon of the batter onto the skillet over each available burner. Wait until some bubbles start to form, flip the pancake and wait an equal amount of time. Repeat until the bowl of batter is empty.
I usually serve the pancakes with pure maple or apple syrup, fresh fruit, fresh made whipped cream and a dusting of powdered sugar.
