Healthy No-Bake Oatmeal Chocolate Chip Cookie Dough Bites

My kids LOVE anything with peanut butter and since they can't take it to school, we often dip apples in it as an after school snack. I tried to make some new variations on their favourite snack, so I modified a few Pinterest ideas and came up with this delicious bite size treat!

Description

Ingredients:

1 cup (dry) quick oats 

1/2 cup lite peanut butter

1/2 cup wheat germ

1/2 cup chocolate chips or raisins

1/3 cup lite maple syrup

1 tsp. vanilla extract

 

Directions:

1.  Stir all the ingredients together in a bowl so that all the dry ingredients are mixed in.  Add a bit more syrup or oats if you need to balance out the consistency.

 

2.  Cover lightly and put in the fridge for at least 30 minutes.

 

3.  Remove from the fridge and roll into bite size balls (approx. 20).

 

4.  Serve to the kids after school (don't take to a nut-free school) and snack on them all day!  They can stay in the fridge for up to 4 days.

 

Warning- these are addictive!
