Apple Oat Muffins

Ingredients

  • ½ cup old fashioned oats (uncooked)
  • ¼ cup coconut sugar (can be substituted with brown sugar)
  • 1 ½ cup pre-blended gluten-free flour (like Bob’s Red Mill)
  • 1 tsp xanthan gum
  • 1 tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • 1 cup almond milk
  • 1 tbsp chia seeds
  • ¼ cup plain greek yogurt or non-dairy plain yogurt
  • 1 tsp vanilla
  • ¼ cup maple syrup
  • 2 tbsp coconut oil
  • 2 small apples, diced fine

Instructions

Mix oatmeal, sugar, flour, baking soda, baking powder, cinnamon and salt together in a medium-sized bowl.

 

In a large bowl, mix almond milk, chia seeds, yogurt, vanilla, maple syrup and melted coconut oil. Add dry ingredients to wet ingredients and mix. Add diced apples and stir. Spoon into greased or lined muffin cups, to ¾ full.

 

Bake in a 350 degree oven for 18-22 minutes, until the tops are firm and spring back to the touch.
