Baked Apples with Cinnamon

Baked apples are delicious with cinnamon, and served with crunchy hemp seed granola. A perfect Fall treat!

Ingredients

  • 4-5 small apples
  • 1 tsp cinnamon
  • 1-2 tbsp maple syrup
  • 2 cups old fashioned rolled oats (uncooked)
  • ½ cup hemp seeds
  • ½ cup chia seeds
  • 2 tbsp coconut oil, melted
  • ½ cup almond milk
  • ¼ cup maple syrup
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • 2 tbsp gluten-free flour
  • ¼ cup your choice of nuts (pecans are delicious with this granola!)

Instructions

Baked Apples

Wash and core the apples. Cut them into slices. Drizzle with maple syrup and sprinkle with cinnamon. Bake in a 325 degree oven for 20-30 minutes, until apples are soft, but with shape.

 

For a yummy way to eat your baked apples, try topping with Crunchy Hemp Seed Granola as well as a dollop of greek yogurt.

Granola

Add all ingredients together in a bowl and stir. Pour onto a baking sheet lined with parchment paper. Bake in a 325 degree oven for 20-30 minutes until crunchy. If you like a crisp granola, turn the oven off and leave the granola in a little bit longer.

 

Sprinkle on top of baked apples. And add dried cranberries for extra sweetness.
