Something a little non-traditional for this traditional celebration!
This recipe came to me from one of my oldest childhood friends!
Acorn Squash Feta Casserole
-2 large acorn squash
-1 medium onion, chopped
-2 cloves of garlic, minced
-3 tbsp butter
-1 cup green pepper, chopped (or green chiles if you want to make it spicy!)
-1 cup plain yogurt
-1 cup crumbled feta cheese
-1/4 tsp salt
-1/4 tsp pepper
-dash of cayenne pepper
-1/4 cup sunflower seeds
Cut squash in 1/2, scoop out and discard seeds. Place it, cut side down, in a greased baking pan. Bake at 375 F for 40 minutes. Cool slightly. Great tip: The squash can be baked a day ahead of time.
Scoop out squash and mash. In a skillet, sauté onion and garlic in butter until tender. Add green pepper (or chiles).
In a large bowl, whisk egg and yogurt until blended. Stir in squash, onion mixture, feta, salt, pepper and cayenne.
Transfer to a greased 11X 7 baking dish. Sprinkle with sunflower seeds.
Bake uncovered for 25-30 minutes or until knife inserted in the centre comes out clean (photo: tasteofhome.com).
