Sweet Potato & Apple Soup

Awesome way to fill your freezer with yummy last minute dinners!

Ingredients:

1 tbsp butter

1 large onion, chopped
1 large minced garlic clove
2 sweet potatoes (or 4 large carrots), peeled and chopped
4 apples (or 4 pears), peeled, cored, and chopped
4 cups chicken broth
1/4 tsp cayenne or white pepper (I would start with 1/8 tsp…can be spicy!!!)
1/2 tsp salt
1 tsp sugar

Directions:

1. In a large saucepan, melt butter over medium heat. Add onion & garlic and cook until softened.

2. Add sweet potatoes & apples (or carrots/pears), broth & cayenne pepper. Cover & bring to a boil. Reduce heat & simmer stirring occasionally until veggies are tender (apprx 30min).

3. Puree in batches in blender or food processor.

4. Return to saucepan and heat over low/medium heat, uncovered and stirring often until hot, but not boiling.  Taste and add salt/sugar as necessary

**freezes well
**serve with sour cream & chives, or sauteed mushrooms if desired
