Description:

Quick, easy to make, healthy summer salad.

 

Ingredients:

2 cups of cooked rice (brown or white)

1 package of fresh spinach chopped

1/2 cup yellow raisins

1/3 cup dried cranberries

1 each red, green and yellow peppers

1 sprig of chopped fresh parsley

3 green onions chopped

1 cup cashews

 

Dressing:

1/4 cup soy sauce

1/2 cup veg oil

3 chopped garlic cloves

 

Directions:

Toss & Enjoy!
