Peanut Butter Cereal Bars

These cereal bars are made with peanut butter, pumpkin seeds, cereal and raisins – and make a great after school snack!

Description:

Ingredients:

3 cups dry cereal (I usually use half rice krispies and half cheerios but have used cornflakes or life in a pinch)
1 cup raisins or dried cranberries or a combo of both
1/2 cup sunflower seeds or pumpkin seeds or a combo of both
1/2 cup honey
1/3 cup sugar
1 cup peanut butter (smooth or chunky)
1 tsp vanilla

Directions:

Combine cereal dried fruit and seeds in a large bowl.

In a saucepan over medium heat bring the honey and sugar to a rolling boil. 

Reduce heat and continue to boil for about a minute

Remove from heat and add peanut butter and vanilla.  Stir until peanut butter is melted.

Pour over dry ingredients and stir until combined well.

Press into a greased 8×8 baking pan. Refrigerate until cool and cut into squares/bars.

 
These store well in a sealed container for up to a week but they never last that long!
