This makes a HUGE salad so you can cut it in half.
Ingredients:
1 can kidney beans, rinsed & drained,
1 can chick peas, rinsed & drained
1 can italian diced tomatoes, drained
1 1/2 c frozen peas
1 1/2 c frozen corn
1/2 c chopped onion
1/2 chopped green pepper
Dressing:
3tbsp red wine vinegar
2 tbsp olive oil
1 garlic clove, minced
1/2 tsp salt
1/4 tsp pepper
Directions:
1. Blend first 7 ingredients in large bowl.
2. In a small bowl, combine dressing ingredients & pour over sald.
3. Toss & refrigerate at least 4hrs.
