Our momstown members are raving about this recipe as it's a perfect thing when hosting a big group, it's easy and YUMMY!
Peel and quarter potatoes. Cook under tender, drain and mash well.
In a large bowl, whisk cream cheese, sour cream, eggs, onion, butter, salt and pepper until smooth. Fold in potatoes, combining thoroughly.
Spoon into greased 11×7"(2L) baking dish. (Can be prepared to this point, covered and refrigerated for 2 days or frozen for 1 week). Let stand at room temperature for 30 minutes.
Bake at 350F for 45-50 minutes or until heated through. (may need longer if cooking from frozen). Makes 10-12 servings.
