Slow Cooker Chicken and Sweet Potato Soup

A mom- and kid-tested recipe, from momstown Burlington’s Soup Swap. The slow cooker does the work while you go about your day, and all that’s left is to blend it!

Description:

1 whole chicken

3 sweet poatoes, chopped
1 onion
3 carrots, chopped
minced ginger and  garlic to taste
4 cups (1 box) of chicken broth

Simmer ingredients in a crock pot for at least 6 hours.

Remove skin & bones from chicken. 

Blend in batches or with an immersion blender, adding water or broth to thin puree as needed.

From the momstown member who brought us this recipe: "This is a yummy soup for babies and kids, and for the adults I like to add a lot more spice to it afterward. I sometimes pour in a tablespoon of cream to the kids' meal for some extra calories."
