This foolproof recipe is the perfect delicious but healthy treat for toddlers, big kids AND mommies. They're also great for grabbing when you're rushing out the door, or for filling out a lunch box. And baking is a great way for kids to learn basic kitchen skills, and if they're older, math!
Not only are they the most moist muffins you have ever tried, they have such healthy ingredients and high fibre (diaper-changers, be warned).
Note: As mini muffins, these have about 1 Weight Watchers Point, and a regular-size muffin has about 3 points.
Ingredients:
1 cup whole wheat flour
1/4 cup wheat germ
1/4 cup oatmeal
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup sugar
2-3 ripe bananas, mashed (the more bananas, the more moist your muffins will be)
1/3 cup melted butter or margarine
1 egg
chocolate chips to taste.
Instructions
1. Preheat oven to 375 F.
2. Mix dry ingredients together.
3. In a separate bowl, mix together mashed bananas, egg and melted butter/margarine
4. Stir the dry ingredients into the wet, and add chocolate chips. Don't overmix!
5. Bake for 11-13 minutes for mini muffins, 20-24 for large
Trust me….you won't be able to eat just one!
