2 cups mixed greens
3 artichoke hearts, cut into quarters
2 oz. chicken breast, cut into small chunks
½ cup cucumbers, sliced
¼ cup carrots, sliced
1 medium tomato, cut into small wedges
1. Toss mixed greens with tomatoes, cucumbers, carrots (and any other veggies you wish to add).
2. Top with the artichokes and the chicken.
3. Add vinaigrette dressing.
*Vinaigrette dressing is easy to make: Mix 2 tsp. vinegar (or lemon) with ½ tsp. mustard, then add 1 – 2 Tbsp. olive oil and season with salt & pepper (and any other herbs you like such as dill or basil).
