Preheat oven to 425 degrees.
2 sweet potatoes, peeled and cubed
1 medium russet potato, peeled and cubed
1 medium acorn squash, halved, peeled and seeded
3 carrots, cut into 1/2 inch slices
1/3 cup brown sugar
2 Tbsp. maple syrup
2 Tbsp. melted butter
1 tsp. vanilla
1/2 tsp. cinnamon
salt to taste
Combine the veggies in a large bowl.
Combine the other ingredients in a small bowl and mix together.
Pour the topping over the vegetables and toss well.
Place everything in a lightly greased roasting pan and bake for approximately 1 hour, stirring every 20 minutes or so.
A great side dish for a casual night or for company!
