Delicious Pumpkin Cookies with Optional Raisins and Nuts

Give me pumpkin! I love it! Pumpkin lattes, pumpkin bread, pumpkin soup, pumpkin pie and even pumpkin play dough for the kids! It’s just the perfect way to celebrate the fall! We made this pumpkin cookies for the first time this year, and my kids went nuts!

Description:

pumpkin_cookies

Ingredients:

1 cup shortening
1 cup sugar
1 egg
1 cup pumpkin puree
vanilla to taste
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon (or more!)
1/2 tsp salt
1 cup raisin (optional)
1 cup chopped nuts (optional)

optional cream cheese or vanilla icing

 

Directions:

1. Preheat oven to 375.

2.  Cream together shortening and sugar.  Add egg, pumpkin and vanilla- beat well.

3.  Sift dry ingredients together and add gradually to shortening mixture.  Beat well.

4.  Stir in raisins and nuts (if you choose to add these, we did not).

5.  Drop batter about 2 inches apart on greased baking sheets.

6.  Bake in preheated oven until golden brown, about 10-12 minutes.

 

Option: These cookies are sweet enough, but you can ice them with cream cheese icing (colour it orange for fun) or drizzle vanilla icing on each cookie.

Makes about 3 dozen cookies!
