Couscous Salad & Homemade Vinaigrette

Great salad, especially if you want to shed a few pounds.

Description:

I have been making this one lately (and it is "legal" on my weight loss program).

Ingredients:

1/2 cup couscous – you can buy and make the Casbah roasted garlic couscous (it is found in the organic section at the grocery store) and put it in the fridge to cool.  

chopped cucumbers

tomatoes and green onions

I add chopped chicken to mine but if you are vegetarian delete this

 

Homeade vinaigrette:

1/4 cup olive oil

1/4 cup red wine vinegar

1 tbsp. dijon mustard

juice from 1/2 a lemon

salt and pepper to taste

 

Directions:

Mix above ingredients and add tbsp. of the vinaigrette to the salad.  It is super yummy and really filling.
