When cooking with kids, what you have in your mind as the finished product may not always be what happens in the end, but it’s not the result but the fun learning that’s important.
These Tortilla Pinwheel Sandwiches are meant to be rolled tightly and then cut in thin rounds on the diagonal, resembling a pinwheel or in our circus theme, a ferris wheel. Was that exactly how they were made at Junior Chef in momstown Milton? Uh… read on to see!
Tortilla pinwheels with chicken, cream cheese and hot red pepper jelly
Ingredients:
1 cup finely chopped cooked chicken breast
1/2 cup finely chopped lettuce
1/2 cup packed shredded cheddar cheese
1/3 cup chopped green onions
1/3 minced red bell pepper
1/2 cup light spreadable cream cheese
2 tbsp sour cream
1 tbsp hot red pepper jelly
3 large tortillas.
In a medium bowl, combine chicken, lettuce, cheese, onions and red pepper set aside.
In a small bowl, beat together cream cheese, sour cream and red pepper jelly on low speed of electric mixer.
Working on one tortilla at a time spread 1/3 cream cheese mixture over one side of tortilla.
Sprinkle with 1/3 chicken mixture, leaving a half a border at top just covered with cream cheese mixture( so you can seal it closed). Roll up tightly, jelly roll style. Wrap tortilla roll in plastic wrap. Repeat process with other tortillas.
Refrigerate rolls if making ahead or just make and eat! Best when served cold.
Our momstown kids couldn’t seem to wait to have them sliced up and bit right in! Our Tortillas were made well and tasted yummy even if they didn’t really look exactly like Ferris Wheels in the end!
