Cooking with Kids: Pizza Muffin Recipe

Our Junior Chefs events always have great meal ideas that get the kids involved in the preparation, teach them about nutrition and empower them to make healthy choices! We love these pizza muffins as a great twist on a classic pizza night. Add the toppings that your family loves and enjoy!

Ingredients:

1-1/2 cups (375 mL) all-purpose flour
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) dried Italian herb seasoning
1/4 tsp (1 mL) salt
1/2 cup (125 mL) vegetable oil
1/2 cup (125 mL) milk
2 eggs
1/2 cup (125 mL) shredded medium Cheddar cheese
1/2 cup (125 mL) diced sweet red pepper
1/3 cup (75 mL) diced pepperoni

additional topping ideas: olives, pineapple, bacon, green pepper, red pepper, etc.

Directions:

In large bowl, whisk together flour, baking powder, Italian seasoning and salt; make well in centre. Whisk together oil, milk and eggs; pour into well and stir just until moistened.

Stir in Cheddar cheese, red pepper and pepperoni. Divide among 12 large paper-lined muffin cups.

Toppings: Sprinkle Cheddar cheese over muffins. Top each with 3 pepperoni slices and 1 cherry tomato half, cut side up or any combination the kids can think of!

Bake in 375ºF (190ºC) oven until tops are firm to the touch, about 25 minutes.
