We’re started a vegetable garden this year and found a giant zucchini hiding under the leaves. Stumped with what to do with such a giant vegetable, I grated it up to make 6 cups of zucchini – enough for 6 delicious zucchini loaves. The perfect snack for my traditionally non-zucchini loving kids.
3 cups all-purpose flour (we combined flours whole wheat, spelt, rice…)
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 eggs
1 cup vegetable oil
1 1/2 cups white sugar
1/2 cup apple sauce
3 teaspoons vanilla extract
2 cups grated zucchini (tip: freeze any leftover grated zucchini for your next batch)
1 cup chocolate chips
1. Grease and flour two 8 x 4 inch pans. Preheat oven to 350 degrees F
2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
3. Beat eggs, oil, apple sauce, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and chips until well combined. Pour batter into prepared pans.
4. Bake for about 45 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
